Basel Pesto w/Tomato Ak-Mak Crunch

Recipe Ingredients

  • 2 cups fresh basil leaves (gently compact leaves)
  • 2 large garlic cloves
  • 2 heaping tablespoons of grated asiago cheese
  • 1 heaping tablespoon of parmesan cheese (optional)
  • 2 heaping tablespoons of walnuts (or pine nuts, but walnuts taste great in this recipe)
  • 1 pinch of kosher salt
  • 1 cup of extra virgin olive oil

Recipe Directions

In a food processor, blend basil leaves, olive oil, walnuts, cheese, garlic, and salt. Blend to your preferred smoothness. Add more oil or salt to taste. (Freeze in small jars or in ice cube trays for later consumption.)

With a sharp knife, cleanly cut Ak-Mak crackers in half. Spoon a nice portion of pesto on the cracker and garnish with fresh tomato. (A sliced cherry tomato in the middle makes a nice presentation) Eat the entire cracker at once for a perfectly balanced flavor explosion – Enjoy!
