Basil Pesto with Tomato Ak-Mak Crunch

Ingredients

  • 2 cups fresh basil leaves (gently compact leaves)
  • 2 large garlic cloves
  • 2 heaping tablespoons of grated asiago cheese
  • 1 heaping tablespoon of parmesan cheese (optional)
  • 2 heaping tablespoons of walnuts (or pine nuts, but walnuts taste great in this recipe)
  • 1 pinch of kosher salt
  • 1/4 cup of extra virgin olive oil

Directions

In a food processor, blend basil leaves, olive oil, walnuts, cheese, garlic, and salt. Blend to your preferred smoothness. Add more oil or salt to taste. (Freeze in small jars or in ice cube trays for later consumption.)

With a sharp knife, cleanly cut Ak-Mak crackers in half. Spoon a nice portion of pesto on the cracker and garnish with fresh tomato. (A sliced cherry tomato in the middle makes a nice presentation) Eat the entire cracker at once for a perfectly balanced flavor explosion – Enjoy!

Chicken Apple Sausage Flat Bread

Ingredients:Chicken_Apple_Sausage_1

  • Country Style
  • Black Cherry Jam
  • Onions (Caramelized)
  • Chicken Apple Sausage (diced)
  • Feta Cheese
  • Spinach (roughly chopped)
  • Balsamic Vinegar

Directions:

  • Mix caramelized onions and black cherry jam together and spread onto cracker. Top with chicken apple sausage, feta cheese, and spinach. Bake at 400 degrees for 5 minutes. Drizzle on some balsamic vinegar

Ingredients:

  • ak-mak crackers
  • raisins or cranberries
  • diced walnuts
  • chocolate chips
  • coconut
  • cookie butter from trader joes

Directions:

  • Spread Trader Joe’s cookie butter on ak-mak crackers add other ingredients.  Lightly on chocolate chips to keep calories down.  Just a few add a terrific amount of flavor.

Ak-Mak “Matzo” Brei

Ingredients:

  • 3 sheets Ak-Mak crackers
  • 4 large eggs
  • 1/2 teaspoon salt
  • 4 tbs butter

Directions:

  • Crush Ak-Mak into a sieve, over a bowl to catch the crumbs. Spray Ak-Mak in the sieve with tap water for 15 seconds. Do not shake dry. Add wet Ak-Mak to bowl with crumbs. Add eggs and salt, stir until combined. Heat butter in large skillet over medium high heat. Add egg/Ak-Mak mixture, stirring constantly, about 3 minutes or until pieces are browned. Just Plain Good Recipe

Ingredients:ak-mak Armenian Cracker Bread

  • ak-mak Cracker Bread
  • Dofino Havarti Cheese
  • Shaved Ham

Directions:

  • Toast in oven until cheese barely melts.
  • Years ago we frequented a restaurant and always ordered plain ole american chili with a large round of Armenian Cracker bread with just a little dofino havarti cheese and shaved ham for dipping and eating a very delicious chili.

Sard-Mak

Ingredients:

  • ak-mak sesame crackers
  • canned sardines in olive oil
  • cracked black pepper

Directions:

  • Open one can of Fresh Canned Sardines Packed in Olive Oil. Place a Sardine on a Ak-Mak Sesame Cracker. Grind a Sprinkle of Fresh Black Pepper on top.
    One could most likely survive on this treat with a glass of water or perhaps a glass of Red Wine.

Olympic Cheese & Crackers Recipe

Ingredients:

  • ak-mak crackers
  • cheese
  • broccoli
  • blackberries
  • raspberries
  • golden raspberries
  • green grapes

Directions:

  • Slice one red raspberry and one golden raspberries across their midsections to create a red and a yellow ring.
  • Slice midsection of a blueberry, blackberry and grape across midsection then poke hole through center to create blue, black and green rings, respectively.
  • Arrange the five rings onto a slice of cheese to match the Olympic symbol: blue, black and red on top, yellow and green beneath.
  • Arrange crackers, cheese, fresh broccoli florets, and fruit in a pleasing way.
  • Arrange on a platter for a group to enjoy, or see a photo of this recipe as a bento box for a snack to-go here.

Directions:

  • Open jars, spread on cracker, eat!  Actually, I just wanted to tell you how much I enjoy ak-mak crackers.  I always have some at home and keep a box at work as well.  They’re so good with so many things, and it’s not junk food.  Thank you Soojian family!

Ingredients:ak-mak Armenian Cracker Bread

  • ak-mak sesame crackers
  • olive oil
  • tomatoes
  • avocado
  • lemon juice
  • various lettuces
  • fresh herbs

Directions:

  • Place broken-up ak-mak crackers in a bowl and cover with olive oil.
  • Add chopped tomatoes (including their juices) and allow mixture to blend.
  • Add chopped avocado and lemon juice.
  • Throw in torn lettuces and herbs.
  • Add anything else that is handy and appeals to your tastes.
  • Toss everything together.
  • Enjoy

Directions:

  • Crumble stilton over cracker. This is the best flavor combination ever!

Open Faced Guacamole

Directions: Just slather as much guacamole to your heart’s content over your crackers and either eat it open faced guacamole or make it a Ak-mak guacamole sandwich. This is a vegetarian favorite to get tons of protein!

Father’s Day Cheese and Crackers

Ingredients:

  • ak-mak crackers
  • Cheese (ideally organic/non-rbst)
  • bell peppers

Directions:

  • This is a super cute Father’s Day snack idea from the Disney FamilyFun website. We did a trial run yesterday, but the bean didn’t like the idea of us eating our trial run …after all, “they are for Papa, Mama!” So, there you go. We presented them to papa when he came home from work: A Father’s Day snack to get in the spirit!
  • We experimented with Ak Mak crackers (broken in half), purple rice toast, cheddar cheese (we used Tillamook), and bell peppers. You can use pretty much anything! If you do use peppers, I found it best to trim the curves off of the pepper so that your pieces lay flat.

Cheesy Cracker

  • ak-mak 100% whole of the wheat crackerfood
  • 1 triangle of semi-soft laughing cow cheese any flavor
  • 1 oz your choice lunch meat cut thin.
  • Optional: veggies cut thin for layering

Directions:

Smooth cheese onto cracker then layer meat on top. Voila, you got a healthy great tasting snack. Serve cold or warmed in microwave.

Spicy Treat

  • ak-mak Sesame Whole Wheat Crackers
  • Spread soft cream cheese on cracker.
  • Then, add a small amount of Jalapeño jelly.

Ak-mak Caper

  • ak-mak crackers separated
  • Goat cheese or your favorite spreadable cheese
  • Capers
  • Raisins(optional)

Directions: Spread ak-maks with cheese(s) and sprinkle with capers and raisins. The flavor mix is really good!

Snappy Smores

  • ak-mak crackers
  • Dark chocolate
  • Peanut butter and/or
  • Sliced banana and/or
  • Creme fraiche

Directions: These are better than graham cracker smores because ak-mak crackers remain crisp and SNAP!  They have little sugar, are nutty flavored and are healthier. Make as open or closed smores. Thinly slice enough dark chocolate to nearly cover the cracker. Place on the smooth side of the cracker.  Microwave for 20-40 seconds until the chocolate is soft or melted. If using peanut butter, smear it on a second cracker and place on top of the chocolate. The other ingredients can be spread on top of the melted chocolate.
